Dominican Academy of Gastronomy knows notes of the new book by José Gabriel Atiles Bidó

A new work focused on the culinary heritage of the Taínos is the most recent literary proposal by Atiles Bidó, who details little-known particularities of Taíno gastronomy.

“The edible landscape of the Taínos” is the name of the new book written by José Gabriel Atiles Bidó, archaeologist, museum designer, visual artist and prominent Dominican researcher, who spoke to members of the Dominican Academy of Gastronomy, arousing significant interest in this new research work, which appears to be a missing link in the chain of knowledge about the history of Dominican gastronomy.

The author explained the anthropological vision that he prevails in the work, covering the customs and behaviors of the Taínos around their diet, including the types of food they consumed, forms of preparation, techniques and utensils they used. “This work is the result of a review of the content of all the chronicles of the Indies that have been studied since 2002, in addition to other investigations of rock and speleological characteristics,” the author explained to those present.

The event took place on Tuesday, November 16, 2021, at a special dinner prepared by Chef Cristóbal Martos at La Cassina Restaurant, with the participation of prominent members of the academy and other experts in the area, such as: Franklin Lithgow Ortega, Enrique De Marchena, Wendy de De Marchena, Simón Suárez, Muyien Sang de Suárez, Dr. Herbert Stern, Begoña Minguez de Stern, Rafael Cabrera, Laura Imbert de Cabrera, Marcial Najri, Rosa Lia Molini de Najri, Kenneth Broder, Cynthia Vega, Johnny Núñez, Mireya Rizek de Núñez, Siegfrido Pared Pérez, Rosy de Pared, Juan Daniel Balcacer, Kenya de Balcacer, José Luis Núñez, Giovanny de Núñez, Thimo Pimentel, Luis Ros and Yokasta Martínez de Ros.

The author
José Gabriel Atiles Bidó, has stood out for his research on Dominican rock art, for which he is a research member of different instances such as the Dominican College of Plastic Artists, the Dominican Museum of History and Geography, the Academy of Sciences of the Dominican Republic , the General Archive of the Nation, and has the distinction of having represented the country before UNESCO and FEALC.

Atiles Bidó, in addition to his important literary legacy, together with Marcio Veloz Maggiolo and Elpidio Ortega designed and built the Manatí Park in Punta Cana and the León Center in the city of Santiago de los Caballeros.

The year 2022 is the date chosen for the launch of “The edible landscape of the Taínos”, a book that will have the support of the Dominican Academy of Gastronomy and that will be able to be appreciated in printed and digital formats.
